Sounds like the intake manifold gasket is leaking internally and it is sucking the oil into the engine and burning it.  This is common on 3100's. Are you running the AC?  If not then it just may take the fan a while to come on.  You need to make sure that the fan is operating properly.

Plugged up cat converter which is causing a leaky exhaust at the flex coupling.

Should be.  The model for the old GN may be a direct fit and plug in if you do a little work to the plug (or swap key's on the MAP sensor plug-in).
