Looks like you did a great job on the floor. I personally don't get heated floors. Maybe for floors on a slab.
Does it heat the room or just keep your feet warm?

If your gas mileage is the best it can be, shop for cheaper gas. In case you all don't know, Sam's club has lower prices on gas for members. Usually about 25-30 cents a gallon cheaper around me. So does Costco. Also, if you have a Woodman's grocery store in your area, they sell gas cheaper than most...

Switch to synthetic oil. In my 92 Beretta, especially in winter months, I gained 2 mpg by using synthetic. Oil is thick when the engine is cold. Synthetics have better cold flow characteristics. Since you were working with the thermostat, is it possible the wire to the temp sender is messed up or disconnected?
If it is off, would that cause the car to run real rich and die? Maybe pull a spark plug and see if it is dark from running rich.

When I recovered an 85 Driver's seat, I was able to get the original type fabric from:

I don't know if they have leather. You will have to have an upholstery shop make seat covers.
I doubt you will find replacement covers for such a rare car but you never know.

When you say left side, do you mean pulley side or trans side? Often left is, as viewed from the driver's seat.
