I know almost nothing about the rear disc setup - it looks like he offers them in 3/8 or 5/8 - any idea which one I'd need for the 92 Z?

You'd have to measure the space you can accommodate for with your rim width.... Right now I think the bearing has a 1/16" or 1/8" max spacing with the factory drum backing plate so you would be removing that and putting 3/8 or 5/8 in it's place so you need to ensure that your wheel getting pushed out that much further will not result in contact with the lip of the rear quarter panel.
