91 gtz

i got a 91 gtz with a quad 4 in it. my temperature guage stays around the quarter temp mark until ive driven it for about 1/2 an hour or more, then it goes up to a bit over half. is it normal for the guage to read over half or should i look into it? i do have a 195 degree thermostat in it right now, and im considering putting in a 180 degree b/c of the head gasket probs quads are known for. good idea? bad idea? your opinions are appreciated.
