'95 3.1, starts running rough around 1500 rpm after warmup, stumbles horribly on accelleration, but letting up on gas and immediately hitting it again, it accelerates fine. after a while the SES comes on and it runs better like it is going into a default mode. SES can go off and then back on again. This tank of gas has dropped to around 10mpg down from usual 30+. Acts like gas is being overfed. Is this possible? Any suggestions?

Check the codes and that may give you an indication of where to look.'
I'd think fuel pressure regulator, bad injector, exhaust leak or O2 sensor failure. Be sure to check all the spark plugs. They can tell you a lot too.

Got a code reader and it showed a bad O2 sensor. It was easy to change out, but not easy to get access to it. Had to remove the PCV switch which was located directly over it. Also had to buy an O2 sensor socket. Total job cost ~65$.
