Any reason I couldn't use a set of these in my 1995-1997 2.2 motors?

Those are the Platinum plugs for the 98-03 motors, but I'm sure you know that since your asking if they are ok for the pre 98 motors... Pre 98 lists 41-928

Some cross reference charts I found go to the same plug from either the 41-928 and 41-948 plug, I'm trying find on AC delco's site what the difference is.

Found it.
41-928 is a .060 gap, the 41-948 is a .040 gap.

So if the motor is 100% stock you should either use the 41-928 plugs, or just re-gap the 948's to .060

Something may have changed after 97 on the cylinder heads or the injection method of the 2.2 which required less gap, but unless you've made those changes then I would leave it at the recommended .060.
