Being on jack stands is 100% safe... If you trust rolling under it to work on it then why not trust the stands with it running? No one would die if it fell off while it was running vs being under it, You'd just break a lot of crap... I highly doubt it would take off, you'd break an axle before it would just rip forward... Have you seen cars jump off a dyno? Not many fly as far as someone would expect it to.
Paint I use is just the Duplicolor 500* engine paint... Don't have any problems with it holding up to heat, its more the surface prep of mine that results in it pealing over time, never actually sand blasted then painted the case... just blast with a power washer.

I think a lot of the concern has to do with the fact that the car vibrates while running, something it normally wouldn't do while just being wrenched on. That vibration could cause it to walk off the stands... There was some vibration, but that was due to the rotors being put on wrong with the rust that had accumulated on the backside of them... Once we got that right there was no vibrations at all, so really if the car is right it shouldn't walk off the stands 
I would NEVER get under it while the wheels are turning that's for sure....

You keep doing this stuff, you could use a engine support instead of the hoist..
