Im gonna swap the a/c compressor from my 94 parts car to my 95 daily driver. But how do I discharge the system?

Let it out or reclaim it into a tank. A reclaimer will pump it out of a system but you have to have a tank to put it in. To be sure it's all out you will need some gauges. If you are going to do it right you will also need a vacuum pump to make sure all the air is out after you have replaced the compresser.
keep'em flying!

if you let it out and get caught its 10 years in fed pen.

A reclaiming kit is expensive, just pay a shop to do it, after that you can buy cheap vac pumps and gauge sets to recharge it yourself if you want.

just unhook the lines and run and come back in 15 minutes it will be all out, then buy a kit to refill it yourself. they are 30 bucks or around there here.
